wow, you sure seem to be at odds with everyone and everything. i am also in southern ireland, and my daughter has type 1 she was diagnosed 4 years ago age 10, we were devestated as she already has cystic-fibrosis. if you are type 1 you should be measuring your carbs not sugar content of food. its carbs that send up your BSL. if you have a carb free meal, ie 2 slices ham, scrambled egg and salad, you will not need insulin, if you have a steak, you will not need insulin, i am sure you have been told all this by your dietitian.
i am interested to know how old you are, and if you attend a city hosp, or a clinic.
there is an excellent book called Diabetes type 1 by Dr Ragnar Hanas. it answers every question you can think off.
i feel you need to stop fighting your illness, relax, and do the very best for yourself. i think insulin is the 8th wonder of the world, and remember dealing with diabetes is an art not a science.
