A study conducted at the Leicester University in the United Kingdom examined the links between vegetable and fruit diets and the incidence of Type 2 diabetes. The analyzed data yielded a significant effect between an increased consumption of green leafy vegetables and the risk of developing Type 2 diabetes.

The green leafy vegetables include cabbage, spinach, cauliflower brussel sprouts and broccoli. The study showed that an increased intake of the vegetables resulted in a fourteen percent reduction in the hazard ratio of 86%. The extra intake would amount to a mere 120g of these vegetables or roughly 1.5 more portions. [click to continue…]
