If they're breaded, that would be the stickler . . . carby breading. If you're cooking them yourself, bread them with a low-carb mixture like equal parts of almond meal/vital wheat gluten/grated parmesan cheese. It makes terrific breading.

A single raw chicken liver is a little over a carb and a half. I love them but being organ meat they tend to raise my bg. If we go to Golden Corral for buffet, I grab 2 and strip the good stuff off and eat the livers. I could eat a bucket of them. Funny thing is, I never liked them when I could have them. Lol

Weird...Im STUFFED right now and ate 5 chicken livers, collard greens, some roast beef, a few onion slices (cooked), 8 half deviled eggs, cottage cheese and 5 cucumber slices...and get this - my BG BEFORE the meal was 160. An hour after, im at 168. ONLY an 8 point rise. What is really weird for me is that Im as low as 168 at all...normally, before last night and taking my first insulin shot, I would be around 290 right now.

Oh, and two peices of baked chicken.

Guessing you had 40 to 50 carbs if the livers were breaded and guessing at portion sizes on the other things. How many carbs do you usually eat?

Well, the livers werent heavily breaded. Other portion sizes were like cup and 1/2 of the collards, cup of cottage cheese, two pieces of chicken, about 5 slices raw cucumber slices and about 8 deviled egg halves. About my usual portions, but minus the carbs that I would normally eat with rice and gravy, and cornbread. Also didnt have the orange slices that I normally would. But, I was still expecting more than an 8 point jump.

Sounds like it turned out well for you. You made good choices.
I am very careful about eating breading. The other day I did have a lightly breaded filet of catfish and mashed the dressing out of the cole slaw. I was amazed it didn't raise me. I sure would have loved a hush puppy.lol
