That's not a huge gain, but yes, I wouldn't like it either. Here are some near-random thoughts ...
-- 1.2 pounds is well within range for pure water weight gain.
-- Doctor's scales and home scales don't often match. In fact, if your doctor has more than one scale, they might not match each other. That 1.2 pounds is well within a reasonable range of error.
But, if this is a real trend in the making:
-- Your diet looks fine. Only thing I'd note is that cashews and almonds often spike me, though that's not true for everyone. Still, they're carbier than macadamias, walnuts, or pecans, so you may want to switch 'em out.
One more possibility: Most ranch dressings are fine (for me, anyhow), but some are sugared and/or starched up, so you may want to re-check the label. Unfortunately, label reading's a must for any packaged/jarred dressing or sauce.
-- Hard to tell serving amounts from here, but it does look like you're doing fine where calories are concerned. It is every bit as important to get enough as it is to avoid eating too much. (Back in my pre-diabetic youth, I went on an old-fashioned starvation diet -- and promptly gained 5 pounds!)
-- Changes in exercise levels may also play a role.
Dietary fat does not cause bodily fat. Proportions and amounts of foods, however, can. Once again, however, your diet looks very good -- maybe some teensy tweaks would help to fine-tune. Maybe.
