My neighbour and father were both just diagonsed, so I'm still learning and researching about how it's going to impact my families lives. One thing for certain is, they both need to limit their intake of carbs and sugars.

Both of them love pasta, so I found the best alternative!! Raw vegetable pasta. I got a kitchen gadget called the lurch spiralo. Its a vertical slicer for vegetables etc, and it makes 3mm sized strands of "spaghetti" out of any hard vegetable you like. In our case, we use zucchini.

I got mine from UK, because they aren't sold in North America. I'm going to get some more, so others can enjoy "pasta" without the worry about thier blood sugar.
