Keeping it simple tonight. Took some previously cooked, crumbled hamburger and some frozen spinach - put in a saucepan with about a Tablespoon of beef tallow, a small amount of water, and some seasoning (salt and dry taco seasoning) and simmered until the spinach was limp. Broke some pork rinds into the mix, added just a bit more water, stirred and let sit for the rinds to soften.

If I had had some guacamole, that would have gone well with it.

Hamburger patty with bacon and melted cheddar, jicama fries, green beans, and salad. Green tea to wash it down with.

Think I've had this since 2003. Told I was Type 2 lean on 2/13/12.
