1/4 c. almond meal
1/4 c. vital wheat gluten
2 T. Parmesan cheese (powder-like)
Salt & Pepper to taste

I'll sometimes throw other spice in the breading, depending on what I'm making.

In a nutshell, dip your fish/chicken/veal/whatever in a beaten egg (both sides) then both sides in the breading.

For crispier/more-breaded items dip in breading first, then egg, then breading again. But that's like 2 carbs per serving...

Good stuff, every bit as good as any breading I've ever had on anything. Was amazing for the cordon bleu last night. And, my family has NO IDEA it's low-carb. The kids can't tell it's not shake-and-bake or some other breading...

That is great that your family does not know the difference. I caught on real early about things mysteriously ending up in food. I was a picky eater as a kid. If I had never seen it in the house and was in the food, I always asked "what is in this". Lets just say I ate a lot of cheese sandwiches

I ate my supper at lunchtime because I wanted it... LOL. T-Bone steak with carrots/broccoli/sugar-snap peas. The veggies I sauteed in olive oil with some fresh chopped garlic and black pepper.

That really sounds good beefy.. I am still learning what veg. I can eat ... So far I know I can't eat potatoes of any kind... corn, carrots, peas and rice or out . Like you I love to eat and just need to learn more of what I can and can't take in. I keep reminding my self I can live with this diet.

Bugg

I had a nice porterhouse MedR, and salad w/ ranch tonight (wonderful)

I had marinated chicken breasts, green beans with french salad dressing and a small whole wheat roll and sugar free chocolate pudding.
