Awesome. We lived in Asheville for a while...too many great places in that area.

We had stuffed zucchini with pork chops last night.

We had country ribs & sauerkraut last night, so tonight & I shredded the leftover ribs & stirred in all the remaining kraut, toasted some thin buns & heated the shredded mixture . . . which turned into pulled-pork sandwiches of a little different sort - not bbq, but incredibly delicious. And what's even better - there's still enough left over to do it AGAIN!

Pizza on portobello mushrooms tonight...OMG it's heaven. If you like Pepperoni and Mushroom pizza - this totally curbs the craving. So freaking delicious!

Paleo Pad Thai... used thin sliced zucchini and spaghetti squash for the noodles. So freaking yummy... I mean, YUM! I want more...my 5 year old wants more...hubby wants more... definitely going to be a new weekly dish.

LOL, I kind of mashed up a couple of them...

I followed this one mainly:

Paleo Pad Thai | Health-Bent

But borrowed some ideas from this one:

Paleo Pad Thai | theclothesmakethegirl

I used chicken breast... boiled some spaghetti squash...then made the sauce w/ Sunbutter, but I did use soy sauce and I left out the fish sauce and coconut milk b/c I don't have those. I used garlic in the sauce, and then red chili sauce instead of the chili-garlic paste. Once the sauce was mixed, I tossed in the zucchini "noodles" and the spaghetti squash...but I also tossed in the sliced up chicken breast and let it all meld. I should have added more veggies probably, but figured that was good enough. Then when it was done, I topped with green onions and some Thai curry seasoned cashews for crunch.

It was soooooooooo good.

I'm having sausages cooked in a tomoto, chilli, pine nut and raisin sauce. How exotic!
