It is a way of eliminating most of the carbohydrates from one's diet. It is an effective way of managing blood sugar. Since it is carbs that raise BG, if one reduces carbs their effect is also reduced.

In order not to starve, one then increases the fats in the diet. Fats do not affect blood sugar. Proteins, however, do, so we keep protein to a moderate level.

Eating LCHF is a way to moderate blood sugar swings. It makes managing insulin easier for insulin-dependent diabetics. Less carbs, lower BG rises after eating, less insulin needed, fewer issues with highs and lows, more stable BG and lower BG overall. It's a real win/win method.
