I'm having a hard time coming up with different low carb meals... Thought maybe it would help with sharing ideas for dinner. What you cooking tonight???
I thought about that too, i make fauxtatoes using cauliflower and i have seen the 'rice' too
Sometimes i just dont like cauliflower though LOL othertimes i love it
Ill see how i feel at dinner time.....even a 1/4 cup of brown basmati will satisfy me i think...and i will hope it wont have toooo big a spike
Tonight was fried turkey ham.
Cooked chopped spinach (from frozen)
Faux "mac" and cheese*
low-carb toast (I liked the "mac" so much I didn't eat the bread.)
*cooked cauliflower, water squeezed out of it. Then I dumped on it some ingredients to make it cheezy - no recipe here, it was an experiment, but was good. Here's what I put in it (I don't eat dairy, so it is a bit strange): a spoon of (no egg) mayonnaise, a sprinkle of yeast flakes, salt, pepper, garlic powder, onion powder - got it hot in a saucepan and stirred in shredded immitation cheddar cheese to melt it and blend with the rest.
Last night was chicken stir fry with veggies, no rice. A friend gave me her wok she wasn't using and it worked great. Nice fresh veggies..mmmm. It worked out so much so that hubby wants stir fry again tonight..lol
Tonight was weird food, meaning not things I typically eat. No real meal. No veggies. Snacks. Got some roasted chicken bites from a fast food place here in the Southeast (Bojangles) - dark meat, spicy, not bad. I had some soft garlic herb cheese (1 carb/T) on pork rinds. My mom had a leftover luscious gooey brownie in her room and I took several bites of it. At her dinner, she had chocolate cake and coffee ice cream for dessert and I took several bites of ice cream and one of the cake. These are the most dirty carbs I've had since New Orleans!
Two hours later my bg is 95 so I'm okay - but it'll be a while before I play with fire again (the hottest part of this fire being psychological ... typically I barely notice the sweet gooey stuff and prefer it that way)
when I stir fry I use a very hot wok . HOT. then I add maybe a T of peanut oil. then add the veggies that take the longest to cook & that isn't long lol. Keep your stir-er going the whole time too. then I remove that item & add another to the HOT wok. and so on.
tons of recipes online just google . I have had my wok for (had 4 at one time overload)lol, my one that I use is way over 25yrs old.in fact they don't even make it any more.
My husband thought the MEATZZA was "okay" - I LOVED it. Next time I'll put more Italian seasoning in the meat as it wasn't real flavorful. And I'll expand on the toppings - this time was just onions and green peppers.
Neither my husband nor myself can eat much dairy, so this was a cheese-less pizza. However, I did sprinkle a little shredded immitation cheese on it - just for the flavor.
If you have maple extract, try mixing some in the cream cheese for the poppers. You'll love it. Or use the walden farms syrup. Almost turns the poppers into a dessert.
David Burke - I may unabashedly love you forever! As I was rolling the poppers tonight, I was just thinking of how my son rolls them in brown sugar before baking them . . . and they're fantastic!
I always have WF maple syrup and as soon as we get some more peppers, we'll be having your "dessert" poppers! Yipee Yi Yo!
My daughter makes jalapeño poppers by removing stem and seeds of jalapeño then stuffing inside with either cream cheese or cheddar then wrap with bacon and cooks outside on the BBQ pit
I halve the jalapeños and remove seeds/ribs. Fill the halves with cream cheese, wrap the filled halves with partially cooked bacon strips and bake for 40-45 minutes until bacon is crisp. If the peppers are big enough, you can make a meal on 'em. I try to pick out smaller peppers so they're just right for snacking.
For me tonight it was spinach loaded with butter, with three soft cooked braised eggs and a squirt of lemon since I didn't know what poppers were...tomorrow may just be them!
Tonight we had beef stew and low carb biscuits. The biscuit recipe makes 6, this is the first time I made them. We each ate 2, I went in an hour later and the last 2 were gone (DH), so it looks like that recipe is a keeper.
For the stew I put an onion, couple of carrots and couple cups chopped cabbage through the processor to thicken the stew. Browned the beef in butter, added a can beef broth and the chopped veggies. Simmered until the beef was done, added a pkg. frozen California blend veggies and cooked until those were done. Turned out thick and good.
For the first time today I decided to start reading through this thread to look for new recipe ideas. It will take a while to get through all these pages, but well worth the time.
I decided to try something new in my diet. I made chicken fajitas!
With peppers..onions..salsa..chicken...lettuce..whole wheat brown rice.. and a little sprinkle of cheese all wrapped up in a whole wheat tortilla. All in all, if i did calculations right , was under 60g carbs. I know its high but its the healthiest thing ive eaten all week .
Had a lot of errands to run so we ate at Golden Corral. I had a baked chicken breast, a salad (brought my own mayo for the dressing), and a cup of chili. Quite a chore to pick out all of the beans. Sometimes eating out can be a royal pain. Now I'm hungry again, guess I'll eat a bowl of leftover stew.
