And I have all the ingredients!

I'm dying - but not for long. Two hours and it'll be done! That would be 8:30 PM - it must, are you kidding me?, cool overnight.

Maybe if I stay up on coffee I could eat a piece at 2 AM ... that's sorta-kinda overnight, right?

I'm gonna beat you Shanny to first bite! My crust is cooling, the filling is ready to be poured, and it's going to be a hit if the raw crust and filling are any indication

You caught me in a mood, Gizmo, a mood for this.

And I've you, Shanny, to thank for having pumpkin in the cupboard, cuz I got it some time ago to have on hand for your delicious pumpkin pie

What if you don't have the sweeteners? Could you use liquid stevia and liquid sucalose, maybe?

I don't see why not. I'd sweeten the crust to taste, then sweeten the filling to taste, if you aren't afraid of the raw eggs.

This turned out well, except ... the crust was overcooked. I baked per recipe and it looked fine when I took it out, but the bottom stuck badly in a non-stick metal baking pan and was too hard.

Next time I'll bake it a bit less ... It's delicious, but I wish I had more of the crust.

Guess I should have mentioned the changes I made to the recipe in my original post. I used powdered Splenda for the sweetener 'cause that's all I have here to bake with. When I looked at the recipe and saw that you bake the crust 15 mins. and the whole thing 50 to 60 mins. I was afraid the crust would burn, so I only baked the crust 10 min. and the whole thing for 50 mins. When I bake, I grease everything, so I also greased the pan.

Sorry I didn't think to post the changes before you took the plunge.

Ha - that's the difference between a real baker and - um - me - you intuit these things. I have to learn by fire.

Thanks for the recipe though, I'll make it again. It'll be a while though cuz I got so excited (and had a huge can of pumpkin) that I made a <burp> double recipe. I'm giving some to my neighbor, but would this freeze?
