Vegetable Quiche
-1 pound frozen vegetable blend of your choice(thawed) -½ teaspoon dried thyme -¼ teaspoon salt -¼ teaspoon black pepper -1 ½ cups egg substitute -½ cup shredded, reduced-fat, sharp cheddar cheese -Preheat oven to 350 degrees. -Coat a 9-inch deep-dish pan with non-stick cooking spray. Place the vegetables in the pan and sprinkle them with thyme, salt and pepper. Pour the egg substitute over the vegetables and bake for 35 minutes or until just set. -Remove the quiche from the oven, sprinkle evenly with the cheese and let stand 10 minutes to melt the cheese and to allow the quiche to completely set.
