The vegetable that eats like a fruit. I think rhubarb is going to be a new staple for me.. one of those things you just don't normally think about. The easiest rhubarb is what I call rhubarb pudding.

Trim and cut rhubarb in 1/2 inch slices. Throw it in a saucepan with a little water and sweetener(s) of your choice. Boil/simmer stirring occasionally until the rhubarb completely falls apart. If you have a low carb thickener you can use it (I used Xanthan Gum) - if not using a thickener go real easy on the water. I won't give any measurements cuz it's not a measuring type of thing - some like it very sweet but I know at least one person who uses no sweetener at all. I just taste the stuff from time to time while cooking and adjust the sweet to my taste. I used enough water to barely cover the rhubarb but you can also use as little as 1/4 cup of water. Let cool enough so you don't burn your tongue.

Whip up some heavy whipping cream with a little vanilla and a little sweetener to put on top and there you go!

The "Rhubarb Pudding" can also be used as a sauce.. maybe on some CrabSmart Vanilla Ice Cream. :D

Carb count depends on the sweetener and thickener.. Rhubarb itself is 4 carbs per 2/3 C and 2 carbs are fiber so 2 NET carbs.

Vicky - I learned something from your post today. I didn't know that rhubarb is a vegetable. We've lived in the same house for many, many years and carefully tend our "rhubarb patch". It is the one thing in the garden that is quite forgiving if we don't get enough rain and wild critters usually leave it alone.

My Mother has made something similar to your rhubarb pudding many times. My Grandmother always called rhubarb her "Spring tonic" (because if you eat too much of it - Mother Nature will definitely let you know :).

I really don't know rhubarb. Maybe because it won't grow in the deep South, but my g'mother in S. Dak. used to make a rhubarb pie that I liked, altho' I've never been a sweet eater to speak of, but now after learning it is a vegetable, I may try to find some one day soon!

Rhubarb is wonderful stuff - we've tried to grow it with really mixed results. I try to be careful of it since it's really high oxalate (attn: kidney stone sufferers like me), but it makes the most delicious crisps & crumbles & jams & puddings! Aarrgghh . . . I need a rhubarb fix - RIGHT NOW! :D

Our rhubarb is about ready to harvest and we have a ton of it. When we were home last summer we bought some strawberry rhubarb butter...mmmm good... Of course hubby got to finish it off... He wants to try to make a sugar free version this year

I googled it... it's pretty much the same as my original post. Add mashed raw strawberries before cooking, use no water, then it's canned in glass jars. You can add vanilla if you choose. Any recipe would work, just replace the sugar with sweetener.

Sounds lovely...and yes, I used to eat apple butter and loved it. Since I'm a no carb b'fast eater, maybe it would be a good supper treat! Now to find some rhubarb! :)

Sorry Shanny for 'bumping' this thread since it is almost one year old. Is there a LCHF substitute for the topping that is used for the rhubarb crisps/crumbles etc.? Our rhubarb is about 8 weeks early and I would love to make something that I get to enjoy :)
