Sound s good. Check your BG before you eat it and then an hour and two hours after your first bite. Curious to know how the pita affects your BG. I'm seeing from 14 to 43 grams of carbs depending on the size. Does your cajun seasoning add any more?

Hmmm.... I'll have to check all my cajun ingrediants, as well as the pita shell... I will check my BG ... just got a meter yesterday. My blood sugar was high this morning at 9.7 mmol/l and I looked it up and it might be related to dawn phenomenon I think. I plan to check it again in a bit.
