I have a tweak on the mug cake recipe that I tried and was absolutely phenomenal
2 tablespoons of butter - melted
2 squares of 91% extreme dark chocolate (Procapslabs.com) - melt with the butter
2 tablespoons of almond flour
2 tablespoons of unsweetened shredded coconut (bobs red mill)
3 packets of Truvia (or what you want)
1/2 teaspoon of baking powder
splash of vanilla
microwave for 1:10 ...
to me it tastes exactly like a coconut macaroon and it was REALLY delicious
