Smoothie/Mousse - "now and later"

Divide one avocado in half.

NOW - a SMOOTHIE
Put the half avocado in a blender. Add 1/4 tsp vanilla and 1-2 T cocoa powder (I use 1/4 tsp. chocolate flavor which has no carbs), and sweetener to taste,

Blend together with enough coconut milk or cream to become smooth and a thick liquid.

LATER - MOUSSE

Put the other half of the avocado in the blender.

Then, in a glass measuring cup:
--2 T water
--1/2 T powdered gelatin - lit it sit 5 mins to soften
Then pour boiling water up to the 1/4 cup line and stir.

Add to the liquid:
--1/4 cup coconut milk
--1/4 tsp. chocolate flavor (2 T cocoa powder?)
--1/4 tsp vanilla exstract
--sweetener to taste (I use 6 drops EZ-Sweet)
--add water up to the 1 cup mark

Add the liquid to the blender and blend until smooth (don't dilute unless you have to to get it to blend well).

Pour into small containers (such as the 1/2c storage containers) and chill.

Note about sweetening chocolate. There is a tendency for sucrulose to make chocolate taste bitter. Since I use a chocolate flavoring*, I don't have this problem. But if you are using cocoa, then you may want to use a different sweetener. Cocoa also adds some carbs.
