Default Retrograding Pasta – Tuna Salad!

My wife has made potatoes salad for me in the past following the ‘retrograding’ protocol. It does not spike me over the first three hours. I cannot eat a plateful but staying with 1 cup, I will not see a significant spike. So..........

Last night my wife and I ate a Tuna Salad that she made using ‘Retrograded’ pasta shells. She boiled the shell Pasta until done, and then poured out the hot water. Then covered it and let it come to room temperature. She then put into the fridge until the next afternoon, so it was covered in the fridge, for 24hrs.

I don’t have an exact recipe, as my wife makes this using a little bit of this and a little bit of that. But as for ingredients, she added tuna, mayo, sour cream, cucumber, capers, celery, black olives, chopped onion, and salt, pepper and a pinch of paprika to taste. Any recipe that you have with similar ingredients, should be ok.... I ate 3 cups in two servings for dinner, my blood sugar readings were: prior to taking my first bite (114), at 1 hr. (104), at 2 hr. (118), at 3hr. (102)

……I would call that a success!

Now please understand that 'retrograding' is somewhat controversial. I have read some that say it does not work, other say it does. What I know is that we are all different and our bodies as diabetics all react differently. So if you want to try search on this website for how to retrograde and then give it a try.....hope some of you find this of use...

OMG - this is going to open up a new gastronomic venture for me. Now, I can't have gluten, but I'm going to try retrograding some GF rice bran noodles. I like pasta salads - perfect for these hot summer days. Hope it works. (I did try retrograde potatoes once and they were good to my BG, but I'm slightly allergic to potatoes so it's not something I can repeat very often).

VeeJay....Good luck it is yummy, and as you say, great for summer....I had ours again last night! My sugars still held and I ate a bit more....SMILE
