I made these last night, pretty good with a cup of coffee, just what I need to get my day going.

The recipe is similar to my almondoodle cookies:


1-1/2 cups ground flax seed (Red Bob organic is like flour)
1/2 cup of whole flax seed
1 egg
1/2 cup of coconut oil
1- tsp of cream of tartar
1/2 tsp baking soda
1/4 tsp of salt
3/4 cup of splenda (any art sweetner should work)
1/2 tsp vanila
cinnamon

Blend egg, sweetner, coconut oil till smooth, then add the cream of tartar, baking soda, salt, ground flaxseed, whole flaxseed. Refrigerate until you can form a ball.

I then rolled walnut sized balls in splenda and cinn, baked at 375 for 10 minutes. Crunchy, sweet and lot less calories than the almond cookies. Still they were really good.

thanks .. I am wondering if either of those would do as a topping for cobblers or a crumb pie??

I don't have a specific recipe, but I've had good luck making streusel toppings by cutting butter into a mixture of ground almonds & other nuts. Prob'ly haven't used flax meal, but it sure couldn't hurt.

Ground Golden Flaxseed is a staple in my house. I make a fake oatmeal with it mixing equal amounts of flaxseed and almon meal, unsweet coconut milk, cinnamon and Walden Farm maple syrup. I also make my own English muffins and bagels using flaxseed. I add it to my LC pancakes, smoothies,cookies and meatloaf.

oh wow I need to find that recipe.

I made english muffins this past weekend, couldn't eat any tho.

I don't have Jeanne's recipe handy, but these biscuits are a good choice too, and I keep them on hand most of the time.

My favourite to make with flaxseed meal is 5 minute muffins!

3 tbsp flaxseed meal
1 tsp cinnamon
1 tsp coconut flour
1/2 tsp baking powder
1 tbsp frozen blueberries
1 tbsp coconut oil
1 large egg
0 to 1 tsp sweetener (I use date palm sugar because I don't tolerate artificial sweeteners)

Mix together in a coffee cup, cook in the microwave for 99 seconds (your time may vary), slice into 5 slices and add lots of butter! I often have this for lunch.

Net carbs - 9

You could make any type of muffin this way, just switch out the ingredients.

I really like using flaxseed in my morning smoothie. I just put ice, sometimes yogurt, always fresh or frozen fruit- rarely just one type, usually best with 3 types of fruit, and 2 T. of flaxseed in the blender. I either add diluted fruit juice or just plain water until it is liquid enough to bring up through a straw.
I sip my 'breakfast' on the way to work- no more skipping breakfast or getting a heartburn from trying to eat too fast. Best part- it keeps me going strong without wanting to "nibble" until lunch.
