Default Making Meyer lemon marmalade

but it calls for 8 cups of SUGAR

so does that mean I should add 8 cups of non sugar.??

wow that will be some high $$$ marmalade.

Walden Farms makes a decent orange-marmelade flavored "spread". You could start with some of that and add the other ingredients for the texture. Much easier, and probably cheaper than making your own.

Sugar has bulk that sweeteners don't. And, it acts as a preservative. I'm not sure one can just replace the sugar in a recipe and get a satisfactory result - nor something that won't go bad in a week.

I thought it wouldn't work..

I made my mayo this week with a meyer lemon .. soooooo good. I wanted to eat right from the Fp. lol

I make low carb freezer jam with no sugar added certo--in the States it would be Ball. The only carbs are in the fruit you use and a tablespoon of lemon juice. I made strawberry and blueberry both had less than 1 carb per tablespoon. I used
2 cups of mashed fruit, I use frozen and thawed fruit
1/2 cup water
1/3 cup granular splenda
1 tablespoon lemon juice
and the package of certo
It made 2 1/2 cups of a lovely not too sweet jam. I divided it into 3 small containers, kept one out and froze the rest. I hate the taste of sweeteners but all you could taste is the jam

There may be a marmelade recipe there too or look on line at "Ball" they may have a low carb recipe there
