So how do you make the caramel? Or do you use sugar-free caramel?

One time I was eating steak from a buffet and there wasn't much else in the way of low-carb items, so I smeared the steak with butter. Got a few looks from fellow eaters, LOL!

Mar2a, my uncle ALWAYS buttered his grilled steaks!

Here is a link to the nommy caramel. It is really easy, but you must watch it.

I used 4 TBS butter, 4 TBS cream, and 1TBS eryth for mine.

(by the way I think this is technically BUTTERSCOTCH, not caramel).

Mortified and bothered, I was so excited that I went during lunch to find me some pork rinds, went to 2 super markets and one convenience store and NO ONE had any, at all, nada, zip. I asked the lady at the convenience store as a joke if they discriminated against diabetics because it is one of the few things we can have, she thought i was serious haha, told her I was kidding but she promised they would be there tomorrow when the delivery guy came. Hitting several on the way home though, there will be rinds tonight if I have to take out a pig on the way home!

By the way, it is NOT a good idea to lick the spoon as soon as you pull it out of the boiling caramel/butterscotch. I branded the tip of my tongue.

Would it be overkill if I were to make both caramel sauce and buttered pork rinds all in one day?

Or drizzle the caramel sauce over the pork rinds?
