I have been looking for a plain tasting grain free bread recipe. I
made the above recipe yesterday. I am slowly learning that
flax and me are not made for each other. It has a gluey texture
and taste that makes for not incorporating into my daily diet. I
was disappointed.

Default Try this

As long as you are not completely opposed to grains, I have found the Bagel Thins with butter/cream cheese to satify my bagel cravings and with a reasonable spike (for me anyway).

Gene:

Are these the bagel thins to which you refer?

PC Thins Bagels - 4-Seed - PC - Products

The ingredients in those would give me very large spikes.

I tested something like these the other day. 20g of carbs. 15 min pre eating it BS was 98. bolused 2u. My I:C ratio is 1:12. 1 hr 110. 2 hr 112 that was at 10pm. Got up at 4:30 am for work. BS 266. This is grains do. Huge delayed spike. It would of been the same scenario even if I had tried testing it during the day

Default Thomas's Bagel Thins

I didn't realize there were other products with that title! Sorry, I was talking about Thomas's Bagel Thins. But let me explain my experience:

Knowing that we all have different experiences and triggers, I'm just sharing my experiences looking for a bagel replacement. I tried numerous thin-style bagels that I found in my grocery stores. They all spiked me, especially the ones using multi-grains, whole wheat, etc. My roommate accidentally bought the Thomas's Bagel Thins (Everything variety) so one morning I tried it with my usual protein/fat breakfast... Low and behold, I did elevate but it was within my normal numbers. I cannot explain it, it isn't even a whole wheat product. I mentioned a bread on another thread that works for me as well: Brownberry "Nutty Grain" (clear/white/green wrapper with an internal cellophane - 80 calories/slice. I can handle 2 normally). All other varietys spike me, but not his one when eaten with protein/fat. Once again I cannot explain it when any other supposedly healthy variety from this vendor pops me over 200.

My present dietary changes have removed all grains in favor of vegetables but every now and then I may treat myelf to a bagel thin or a slice of bread, we'll see.

Of course the recipe on this thread does sound really good. If it tastes as good as it sounds and keeps our numbers in check, why buy manufactured?
