I found this book at the library, published 1995 and reprinted 2012. I'm finding it to be a great resource. There are ways to cook greens that I hadn't thought of before, such as seasoning with lemon, ginger and garlic. Or coconut milk. Or curry.

The best part for me is that the recipes don't mostly call for dairy or egg. (Which I can't eat much of.) And I'd say that for the most part they are low-carb or can easily be adjusted to be so.

So, I'm adding to my usual greens of cabbage, kale and spinach to include chard, radicchio, escarole, endive, sorrel, watercress, and many more - if I can find them.

Dandelion greens, anyone?

Nice! Dark leafy greens need to be prominent in my diet. I'll look for this - thanks.

I am on a jag of mixing mustardgreens and spinach, blenderizing, and season with Indian Spices -- Sarson ka Saag if you are interested in looking it up!

Very nice!! Just looked it up on Amazon, the kindle book is $9.99. I'm adding it to my Wish List for now, but will probably pick it up sooner than later.
