Default Chili help

is there a way to cut the carbs down on my chili?
I use 1 12oz can of tomato paste, 1 of diced tomatoes (with green chilies) 10oz, and 1 28oz can of diced tomatoes. plus the other usual stuff ( I don't use beans because I HATE them lol) like meat and other low/no carb things.

I'd ditch the tomato paste . . . it's so concentrated, it's gotta be loaded. Sixty-four grams of carbs in that one 12-oz can of paste. If you want to concentrate the flavors, just let the chili cook down by itself - long slow cooking never hurts a dish like chili - in fact it makes it better.

Gizmo has a low-carb chili recipe
MCS has one too, but you'd want to leave out the beans

So maybe if i let it cook overnight then take some liquid out in the am it might.not he soupy by that night?

The less liquid you put in, the less you will have to cook off. It looks like you are trying to bulk up your chili with tomatoes. Instead, I would cut way down on the tomatoes and bulk it up with lots of chopped green pepper and celery, and sauté them with the ground beef. That should cut down on the carb count.

I use 4 big tomatoes and let cook down.

Oh, and maybe add some (a little!) red wine vinegar, if cutting back on the tomatoes makes it less tangy ...
