Default Cuban style Vanilla Pudding (Natilla)

so this weekend i made Natilla for my husband, it's always been his favorite desert, i substituted sugar with Splenda but his blood sugar level still went up a lot, the other major ingredients is Milk, Egg yolks and cornstarch.

could one of those other ingredients have caused his blood sugar to go up?

I would guess the likely culprit is the milk. Milk has about 12 grams of carbs per serving. While using Splenda decreased the sugar carbs, he would still need to count and plan for the milk carbs also.

Sorry...I forgot to add that a serving of milk is a cup.
