Question Storing Bacon Grease ?

I just fried up a pound of bacon and put the grease in a covered can to keep it for cooking but I wonder if it needs to be refrigerated or not ? Seems like people used to keep it in a coffee can under the sink years ago but I wonder if it will go bad.

I wonder that, too, so I keep it in the refrigerator, and any amount that I'm not going to use in a week's time I freeze.

But I also strain the hot bacon fat to filter out the bits of meat stuff - which makes my bacon fat more "pure" than what my mother had, which was the can on the counter.

I guess I'm to cautious about food spoiling to leave the grease on the counter (or under the sink).

I keep mine in the fridge and I don't strain it either. I am going on the thought that the fat preserves any meat suspended in it. Also, I usually am cooking with the fat so if bacteria were an issue, it would get killed in the frying pan.

I also think that cooked bacon is actually good for far longer than the official recommendation given by government(3 or 4 days). I mean, how else could you keep "real bacon bits" in the fridge for weeks?

I keep mine in the 'fridge and what's this about bacon going bad that fast? I keep my 3 lbs at a time for weeks or a month in the 'fridge and it stays good.

Outside the fridge has a tendency to draw critters too, so in the fridge is always the best bet.

I keep mine in a glass jar in the fridge. I agree with the critter thing, too easy to draw a mouse or rat into your house leaving anything out.

Well that's what I thought. But if you search for an "official" answer online, everyone says 3 to 4 days.
