Default Lasagna

A few months ago I decided to go meat-free. Recently I found a great eggplant lasagna recipe. I use wholemeal lasagna sheets, and have 1.5 sheets for each serving.
Carmela's Lasagne Di Melanzana (eggplant Lasagne) Recipe -

Usually with these I just pour passata (a.k.a. tomato puree) on the sheets and place the lasagna in the oven for 40 minutes.
I'm not sure how I should carb count these though
The carb book I use only has a listing for wholemeal pasta boiled, and wholemeal pasta dry... So what would my cooking method be? How do I count the carbs for this?

Also, if anyone has suggestions for better substitutes to wholemeal lasagna sheets, would be very much appreciated. Thanks
