I broiled a chicken breast, had 1/2 of a potato, a small salad with Walden's french dressing and 2 servings of sugar free cinnamon roll pudding.

I ate an experiment for dinner and it wasn't bad. I wasn't really hungry but I just bought my first flax meal today so I decided to mix about a teaspoon of flax meal with a tiny bit of fake sugar and a bit of cinnamon, and some vanilla extract in a little 1/2 cup container. Then I poured about an ounce of heavy cream on top, stirred it up and put it in the microwave. At about 16 seconds it started boiling so I stopped the microwave - stirred again and it wasn't half bad - kinda like a hot cereal. So then I thought about the left over pumpkin "pie" pudding in the fridge so I mixed the two together. The balance was wrong so I made a second batch of flax pudding, mixed it all together and it was pretty good. Do you think maybe I'm getting bored of the same food?

I think you're very inventive! I may have to have a little bowl of pumpkin flax cereal myself one of these days - I'm going to have mashed pumpkin coming out my ears if I ever get busy & bake our little crop of pie pumpkins.

I had cold ham with various pickles (cucumber, onion, beetroot, and tomatoes). Followed by a low-fat yoghurt and a couple of dried prunes and apricots. Then a small amount of mixed nuts, seeds and dried fruit. Didn't test.

I had avocado salad with lots of fresh green and tomatoes..and salsa :P

I ate an eggplant casserole, I knew it would spike me (leftovers), ate it anyhow ... sure enough, 130 this morning.

Too many carbs from the tomatoes and onions. But it was good.

Kinda-sorta. Eggplant, tomatoes, onions, fake ground beef, greek seasonings (thyme, marjoram, cinnamon), shredded swiss. Not gonna try it again, alas!

Heheh! Now it sounds more like moussaka! I haven't tried that since diagnosis - but it was a big favorite around here before.
