Default Lily's Baking Chips ... the aftermath

I had seen a few of my favorite LC recipe sites recommend Lily's Baking Chips which are sweetened with Stevia and Erythritol. Since I have had great success making my own at home with the same ingredients, I make the trek to Whole Foods and bought 10 bags.

Well now I feel really dumb! When I make my own chips using cocoa powder, stevia and Erythritol I do not have any gastro distress. However after over 7 tries with these chips, I am forced to admit that these chips turn me into a fermentation machine... I have never farted so loudly or often in my life!

Looking at the label, the only difference I can see between my recipe and theirs is inulin fiber and soy lecithin. I think the inulin is the problem, as I have soy lecithin is in lots of foods I eat and I don't have trouble while I do have serious problems with fiber.

How annoying that what would have been a great go-to item for when I'm too lazy to make my own chips is off the table because I can't leave the house after eating them!
