I'm suspecting that in my case wheat is a specific problem for me. Any form of wheat. Since I've eliminated it completely my BG readings have been *remarkably consistent* though not terribly desirable - they've been varying from 136 to 141. This is fasting and 2-3 hrs PP primarily. Prior to this, they'd often go much higher. I'm very relieved to find this much consistency at least. Does anyone else find that very specific foods are a huge problem?

Are you testing for different foods to see how your own body reacts? What may be okay for one person, may not be for another.

Wheat is a problem for many people - not just the carbs, but the high gluten content. Many, many people have found that their health improves just by completely eliminating wheat.

I am gluten-intolerant and haven't (knowingly) had any wheat and in many years and had adjusted well to the gluten-free WOE. Eating LCHF and not eating any grains makes being gluten-free so much easier.

Yep, my motto is "don't cheat for wheat." Not even when it's the LAST ingredient on the fill-in-the-blank-dish.

I save my carb binges for fruit and chocolate and occassionally some real sugar.

I read Wheat Belly about the time I was diagnosed, it was the first thing to go.

Wink GG crackers

The GG Bran Crispbread I was eating once a day, every day, was my tipoff. But now I'm realizing that Carbquick is probably also off the docket. Thank goodness I found Optimist's crackers! It makes such a difference to have something to spread (butter, cream cheese, peanut butter, guacamole, etc.) on.

I figured out grain and I needed to live in separate countries a few years ago. Recently I started having disturbing symptoms...eggs then peanuts are no longer my friends. Don't know if I am actually allergic (have not been tested) but I know I feel better, look better, and my BG is much happier without them.

Let's see, what else? Oh! Anything with HFCS in it. Even 1/4 tsp of something with high fructose corn syrup in it sends my BG into the stratosphere and takes days to recover from.

Wheat is the hardest carb for me to calculate. Unpredictability and insulin do not mix well.

Also, while all carbs make me feel bad physically, wheaten foods seem to affect my mood and cognition on top of that -- plus, all ill effects last a few days longer with wheat.

I haven't gotten a diagnosis for celiac/gluten intolerance yet. I may ask for the DNA test. I do get symptoms, and I also believe in a proper diagnosis.

Still, I cannot stand the idea of taking the other test, because I'd have to eat gluten for awhile to see if antibodies develop. Since I know I can't tolerate the stuff anyway ...

Symptoms when eating gluten is an indication for gluten-intolerance. I never got a medical diagnosis, but I know if I eat gluten, I get sick, if I don't eat it, I don't get sick.

I did get the DNA test - from an on-line lab since I had no insurance and no doctor at the time. It appears I don't have the celiac genes, but do have two genes for gluten-intolerance. (Some doctors and labs only recognize the celiac genes, so will return a negative result if those genes are not found.)

From my own experience & that of others who listen, I'm quite convinced that modern wheat is a devil in disguise. Although all grains are avoidable, wheat takes the No. 1 spot.

Oh, I'm definitely intolerant, with all the trimmins'!

Still, I'm also sort of a completist when it comes to diagnosis. That, plus I want to see LOTS MORE RECOGNITION of the poison peril in modern wheat, which can only happen if more of us come forward and volunteer to become scientific statistics.

It would also be nice to know exactly how closely I need to check labels on things like soy sauce, blue cheese (...sob...), spices, etc.

I do have a health plan (HMO), but will likely need to go off-campus, so to speak, to get as complete a workup as possible without eating gluteny carby foods for a month or more.
