Default Tasty lunch w/Leftovers...

Had a leftover chicken breast (cooked, lightly seasoned) and didn't know what to do with it, so I decided to "play with my food" a little.

Started with a strip of bacon, diced up into small pieces (roughly 1cm or 1/2" square). Added a bunch of green onion and green pepper and fried it up.

While the bacon was cooking I sliced up the chicken breast into stir-fry sized pieces, chopped up a handful of almonds, some broccoli, grabbed some sugar snap peas and shredded some carrot.

Once the bacon was cooked, I added the chicken, almonds, broccoli, peas, carrots and stir-fried it up. Added a little garlic powder, onion powder, black pepper, some crushed chilis and a hint of cayenne (I like spice.)

Once it was all ... purty ... (veggies gets nice and shiny when cooked in bacon grease ) I plated it up and shredded a little marble cheese on top.

OMG yum. Took like 10 minutes and was excellent. The almonds added a nice nutty crunch to it all, and it was delicious.

Very creative and it sounds very tasty!! Here's what I had....my special chef's salad! I keep all my favorite ingredients on hand at all times so it only takes a few minutes and I'm eating:
  • Lettuce (romaine and iceberg)
    • tomato
    • cucumber
    • hardboiled egg
    • crumbled bacon
    • sesame seeds
    • ham
    • chicken breast or turkey
    cheese
    topped off with ranch dressing! It's really a full meal so I eat it around 3 pm and then just have a light snack for dinner.

Whenever I make chicken I always make extra, there are so many things to do with the leftovers. Sometimes I get creative for breakfast and take the leftovers from dinner, chop up whatever veggies I have, add some broccoli slaw mix and stir fry in Coconut oil. Sometimes I will even add shiratake noodles.
