My "go-to" snack lately is a pepperoni stick and cheesestring, side-by-side in my fist... I nibble on them together, getting a delicious taste of pepperoni and cheese in each bite, and no carbs = no spike.

Dx'd T2 Dec 19, 2010 - Fasting BG: 14.8 (267), A1c: 12.1, Wt: 290lb (over 320lbs at my heaviest)

As of Apr 23, 2013: 14-day Avg Fasting BG: 4.7 (85), A1c (Dec21): 5.1%, Stats: 230lb, 6'3" now with 37" waist

Low-Carb (Usually < 45-60g per day on a 3,000+ calories daily diet)

On Metformin only for meds. Exercise 6 days a week.
Supplement only with: Men's Multi-Vitamin, Vitamin D 2000iu/day, Aspirin 81mg, Cinnamon Extract and Fish Oil all 1x per day

I hear ya, Beefy! I have been chowing down on authentic air-dried Spanish fuet salami sticks alongside some fresh English Cheddar (not as good as Canadian Cheddar but it will do).

Talking Sourdough Bread

I have been avoiding all bread on a LC diet, but have recently found that if I have eggs on sourdough toast, my blood sugar doesn't rise. I'm so happy ! It may not work for everyone but it appears to be quite common from my googling about it. Also find outmeal is ok for me too - not the processed minute outs though. Good luck.

Let's see... pork rinds, macadamia nuts, cream cheese mixed with Splenda and cinnamon on Optimist crackers, homemade beef jerky, devilled eggs... num!

I have a dehydrator I haven't used for years. Anyone have a great beef jerky recipe complete with marinade (low carb, of course)? I have to check the recipe section but if someone is sitting on a great recipe they haven't shared, bring it on!!!

Red wine, pickles and peppers, olives and Caramelized onions on just about any thing.

My favorites are avocados, heavy cream in my coffee, cashews, almonds mixed with hazelnuts (not separately). So far.

Oh, yeah. Forgot gin martinis. It actually seems to help lower my blood sugar (no, not advocating anyone getting drunk).
