Broiled flank steaks tonight stuffed with feta cheese and a bit of spinach. Not having much else. Numbers have been running high all day today, not sure why. Been eating clean all day, extra low on carbs. The only thing I can attribute high numbers today to, is the nature of what we're dealing with.

Chicken apple sausage and Dave's (my DH) cole slaw. Yummy and lowered my bg readings 1, 2, and 3 hours pp.

What's chicken apple sausage? Is that something you made or bought? Sounds delicious.

I never thought about availability in other states, but here in California, chicken apple sausage is almost a staple. We get ours at Trader Joe's because their ingredients favor LCHF more than other brands. I don't often eat the chicken apple sausage because I'm afraid I will spike, but it's been fine so far. My favorite is sun-dried tomato sausage, though. Yummy!

Omelette with 1 toast slathered with butter. And 1 piece of 85% cocoa dark chocolate (Lindt).

Default Stuffed grape leaves

Absolutely gloomy and rainy today, so I made a big pot of stuffed grape leaves. I substituted barley for the rice. Mmmm. A salad on the side and I had a nice LC dinner. And nice BS numbers later.

Beef chuck roast seasoned well and cooked in the good ole cast iron pot with fresh mushrooms tossed in near the end , plenty to have some leftovers for my breakfast tomorrow.

I was wondering about it too. I googled "chicken apple sausage" and found several references such as where to buy it and also a couple recipes. This one looked easy! I might try it.

I've got pre made meatloaf , salad without dressing and tons of olives , again no carbs at all ( I'm sure meatloaf had some but not enough to bother me )
