roast pork belly tonight,served with my favourite mash,i like to mash pumpkin,coliflower,brocoli together with a dollop of butter and cook some sliced cabbage up and stir that into the mash as well.bit weird I know,but I love the stuff.

7.75 OZ can of Great Value brand Beans & Wieners with a total carbohydrate count of 29grams! eat them right out of the can with cup of coffee!

I had a meatball sandwich tonight with two slices of the 70 second flax meal bread, 3 meatballs ( cut in half ) and a slice of swiss cheese. Just a little of Prego Spaghetti sauce. I figured about 15 carbs total. Man that flax bread is filling. I ended up only eating one piece and was stuffed. It was really good and 1 hour later bg was 113.

Found it. It was Bugg who mentioned it. Try sending him a message about it. I did a google and found several. Seems lots of women named Belinda have their own batter recipes.

Brandi's Breading is the only one I'm aware of . . . and since Bugg mentioned he 'dusted' his eggplant, I suspect he was using a breading mix and not a batter. But he can come & explain it himself, if he has a new invention we haven't heard about.

BELINDA's BATTER ?????

I have searched and looked and I don't know where I got that name... LOL... Anyway here's the recipe...

2 cups soy flour
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder

We use it mostly on vegetables like squash and eggplant. Salt the vegetable in order for the salt to draw moisture. Then dusts them good and put them in the frying pan.

We are frying eggplant and okra tonight... I'll take a picture and post it if I can...

bugg :-) loves fresh vegetables...

P S.. I made a picture but I forgot how to post... Oh dear!
