We had leftover steak tonight with a small salad on the side and smashed cauliflower with butter and fresh grated cheese.

Sausage and saurkraut. Cucumber/onion/celery/tomato salad with vinegar & oil dressing, sweetened up a bit with stevia.

LC Pecan cookies for dessert.

I decided to be the cook tonight since I don't have much of an appetite the past hour or two. I made my guys bacon - cheddar cheeseburgers and topped them with bacon. I then put a few olives and fresh mozzarella on the side and served it with a greens salad and low carb Italian dressing.

Friday night is Taco night and I have already made my Provolone taco shells. They really did come out great.

For our 1yr wedding anniversary we decided to eat at red lobster because of the steak and seafood maybe being more compliant to my condition. This is my first dining out experience since diagnosis. I had shrimp cocktail, salad with bleu cheese and snow crab legs.

I never have any trouble eating at Red Lobster - I just ask them to hold the biscuits & substitute veggies for any potato sides. Their bleu cheese dressing is great!

Happy Anniversary!

I used to love peas with salt and butter. Your dinner sounds totally delicious! I can't have peas, tomatoes or onions now, but sometimes which I could.

Tonight we had T-bone steaks (they were on sale this week) and smashed cauliflower. I feel like I can't eat enough cauliflower the past few days. I have to portion it out because I don't want to go over on my carbs. I keep mashing it and adding butter and salt. Not sure if it's really the cauliflower I'm craving or the high amount of vitamin C in it, maybe.

Lovely springlike day today, and we had a lovely springlike meal of shrimp louie. OWC had s/f pudding for dessert, but I was stuffed, so I'm just enjoying a tall glass of iced green tea. Do I ever wish right now that we lived on the coast instead of landlocked Missouri!
