The most important thing to remember about liver is don't cook it to death. Overcooked liver is akin to shoe leather! I always started with diced bacon & chopped onion, cooked together until the bacon is just about completely done & then slap the liver in too (pile the bacon/onions over at the side of the skillet), flip it after a coupla minutes & voilą!

In years past I breaded the liver with flour, but that isn't necessary - in fact it doesn't change it much at all, so unbreaded is fine.

Two chicken with Rosemary sausages (Trader Joe brand) with pan sauteed yellow squash and two small eggplant, from the garden. Kale, leaf lettuce and tomato salad with mixed olives. Red wine. I know the tomato are a "fruit" and understand and accept the consequence. Tomatoes and strawberries are my 2 favorite foods. I don't eat tomato during the winter, but when they're fresh from the garden... Everyone has their personal "line in the sand." My line is tomatoes, in season!

1.5 oz oven roasted turkey breast chopped. Cauliflower au gratin made with 3 oz cauliflower, 6 oz block parmesan cheese, 1 oz extra sharp cheddar, 1 oz Kerrygold Dubliner cheese, 1 oz cream cheese, 3Tbsp HWC and .8 oz red bell pepper for some color. Little bit of garlic and onion powder, pinch of nutmeg and fresh ground pepper on top.

Melted all the cheeses and HWC and peppers/spices together, stirred in the already cooked cauliflower and chopped turkey. Warmed it a little. When I get ready to eat I'll pop it in the toaster oven and warm it thoroughly and brown the top.

7 g carbs/ 50 g fat/ 32 g protein with the products I used.

Wilted lettuce! That's all . . . just lettuce/onion/bacon & bacon grease! heheh!

Last night I made Crack Slaw as also posted in our own Recipe sub forum. It is to die for!! The only addition I made was to add an ounce of diced red peppers. I used fresh ginger instead of paste (see note below) and garlic, coconut aminos and lots of sambal oelek. I like things hot! Only used a tiny pinch of splenda and a splash of plain rice vinegar. Made a single serving.

It was so good I am making it again tonight with shrimp instead of the ground beef! I'll use CO along with the Sesame Oil to cook things up as the shrimp don't have that much fat.


**I picked up some of the ginger paste at the store thinking to use it, but when I got home and tasted it, it was way sweet!! I got out the magnifying glass to read the ingredients, the jar was so small I couldn't read it at the store. The second ingredient was HFCS!!!! Into the trash it went. Note to self, put magnifying glass in purse!

Meatloaf stuffed with goat cheese and beet greens. Sauteed eggplant and yellow squash. Decaffeinated, unsweetened ice tea.

We made the crack slaw tonight, and it's going to go into the regular rotation! This time was with ground beef, but I see shrimp, pork, chicken on the horizon too. A very tasty dish, and one that gets better with reheating.

At the ballpark last night: Sheboygan bratwurst with mustard and a big pile of sauerkraut. No bun.
