We haven't eaten yet, but the salad is chilling in the fridge, and the steaks are coming to room temperature before I slap them on the griddle. Thick-sliced strip steaks and http://www.diabetesforum.com/diabete...tml#post221345. Doesn't get any better!

Default Peaches & cream . . . ☺

We had the last of the steak soup for dinner tonight, but it was the dessert that knocked our socks off. I had left a bag of frozen peaches down in the fridge to thaw yesterday, but basically forgot them. So today getting groceries, we found some Breyers Carbsmart ice cream and since OWC has been jonesing for ice cream, I thought it might be worth a try just to avoid a trip to Dairy Queen this weekend - you know how that goes!

Got home & he'd forgotten about it, so I dumped out the peaches & decided to whomp up a sucralose-sweetened syrup with them & see how they worked as ice cream topping. For a guy who's a diehard plain vanilla ice cream freak, he sure dug into it topped with peach syrup! I had a taste, and it was wonderful. He'd better eat it up quickly so I don't get tempted.

Fresh from the garden yellow squash and eggplant and Anaheim pepper (each smallish) and onion sauteed in olive oil with 1 tsp garlic. Threw in a leftover chopped roast chicken breast with skin on. 2 big TB prepared artichoke dip mixed in. Yummy. Glass of cab. 90% dark chocolate squares for desert.

I had the same dinner both tonight and last night, broccoli cheese soup. Last night, I also made sauteed zoodles. Tonight I made almond/flaxseed bread topped with a tsp of peanut butter.

Salmon with lots of natural oil, broccoli and little bit of quinoa with mixed veg. First time trying quinoa and it was pretty good. BG 5.3 pre meal and post meal 2hrs later it was 5.8. Going to have this once a week from now on.

If you're going to start eating it once a week, you'd better test at the one-hour interval after eating to make sure of how high your spike went - it prob'ly went over 6.0 while you were waiting two hours.

Technique for eating to your meter.

Same thing she she always has but anxiously awaiting. She knows she has an hour but was sitting on it and trying to manually spin it when I walked in the room. 1 minute after it is supposed to run she lets you know if it failed or we forgot to refill.

Salmon bunless burger. Ground salmon, chives, egg binder, lemon-pepper NSA seasoning. Seared both sides in olive oil, finished off in the oven. Used the frying pan's "bits" and oil to sautee' some zucchini, yellow squash and green bell pepper from the garden with a tsp of minced garlic and a few dashes of seasoning.

Pork loin from a piggy a friend of ours raised. New potatoes for everybody else sliced most of the way through every 1/8th inch and drizzled with bacon fat from breakfast. Roasted in the oven in a casserole dish. I added green beans into the center of the casserole with more bacon fat. I'll have a few grean beans and a couple of thin slices of pork on my salad.
