Had crock pot roast beef, cooked all day with a stick of butter and some
Better than Bouillon - beef flavored, a bowl of broccoli nuked with butter, a chunk of cheddar jack, and a spinach/spring greens salad w/cukes, baby red bell, grape tomatoes, onion and EVOO/ACV dressing.

Don't remember if I mentioned it, but at hospital first day or two got OO and red wine vinegar for salad. The girl that worked that weekend took off and her replacement sent up a container of cooking oil and another of regular white vinegar, I swear to God.

Went out to eat...had Mexican Food at our favorite place....Low Carb Style....Ordered steak Fajitas which comes with cooked onions, and green peppers, shredded cheese, slices of steak, sour cream, slices of avocado, lettuce, diced tomatoes and peppers, and hot sauce, ....I pile it all up on the plate, push the rice off the plate, add more hot sauce and dig in! Yum Yum...my meter says ok also....of course I never open the soft taco shells they bring with them.

I was looking through one of the links in Blood Sugar 101, the one for Linda's low carb meals. She had a recipe for sausage/chicken, mushroom cassarole, which gave me the idea for something similar. I bought a rotisserie chicken and shredded half of it. I then sauteed 1/2 of a sliced yellow crookneck squash, 1/2 zucchini, 3 mushrooms, and green onions in a combo butter/coconut oil. I then added in half of the shredded chicken. I took about 2 oz of cream cheese and softened it in the microwave, added a little Dijon mustard and stirred them together, then added that to my chicken/mushroom mixture. After about a minute of simmering, I added some shredded cheddar cheese.

It made two good servings, and I will definitely make this again.

Made the spinach-blue cheese meatloaf muffins from recipe section. I used psyllium husks instead of bread crumbs and added Italian seasoning. I used defrosted frozen spinach instead of fresh and made creamed spinach with the rest of the package. They turned out quite yummy.

I still feel guilty about consuming all this fat! Tonight I made a pepperoni pizza on an almond flour/egg crust. I have a fudge fatbomb freezing. We'll see how it goes. I'm telling you.... it makes me feel devious

As promised! This a chocolate peanut butter fatbomb. (Added a few chopped walnuts) Topped with whipped heavy cream. I could get used to this!

I made some cabbage stroganoff last night (with a twist)I pan fried some strips of fatty rump steak and tossed that in with it along with a splash of Worcestershire sauce.very nice feed indeed.(thanks to the recipe forum)I don't get a lot of time to log on these days(running a commercial cleaning business)but iam very strict with my diet and iam doing really well,thanks to this forum and all you lovely people.regards to all.radar.
