Roast chicken breast. Garden fresh tomato slices. And oven baked delicata squash. Delicata is so good. Tastes like butternut or acorn, but doesn't impact my bg so much. Thin skinned, easy 30 minutes at 400. So good.

Tonight I had a very simple dinner as I wasn't too hungry. Zoodles sauteed in butter/coconut oil (with a tiny bit of chopped onion). I topped it with a blend of sour cream and NSA BBQ sauce, and had 4 cherub tomatoes on the side.

bagged prepared salad
301 g size
and some parmesan cheese

it says 13 grams carbs - 2 grams fibre
11 grams carbs for 100 g salad
but doesn't say if that's the count including
the things that come with it that I don't use
the dressing and tortilla strips
I use a normal salad dressing so I can see the label

Big pile of mixed salad greens with pepper, garden fresh tomatoes, blue cheese crumbles and two slices fried, chopped Spam. Yes, Spam. I love it. NDN (no dressing needed; lots of flavors here.) 2 glasses Ruffino Chianti.

I got some spam in single packs to use as trip food. Discovered I like it too. My dinner tonight was salmon salad on romaine with pepperoni chips dipped in homemade blue cheese dressing. Drizzled the fat that cooked out of the pepperoni over my salad. Yumm!

My first husband was Chinese, we ate Spam quite often. It is great for stir fry!! I always have it in the cupboard.

I had a Johnsonville Beddar Cheddar sausage with spinach and a bit of red onion and Anaheim chili sautéed in local organic grass fed butter. Purple Haze goat cheese and a glass of dry white wine.

I had a left over casserole of Italian sausage, ground chuck, black olives, Italian sauce, etc. of your favorite pizza toppings such as onion, etc. and 2cups Mozzarella, sharp cheddar, and parmesan cheese topped with pepperoni and baked till cheeses melted. I guess about 10 minutes. Froze 4 servings for later and ate about 2 pieces.

T-Day leftovers yesterday for dinner. Turkey, cranberries, Brie melted into a comparatively (10g) low carb wrap. Ensured ratio of turkey and cheese to berries and wrap was good. Allowed me to break out the rarely used pancake/sandwich griddle.

Enjoyed with a side salad of a handful of raw spinach leaves topped with reheated T-Day roast veggies, celery and brussels sprouts, NDN (no dressing needed) because of all of the great flavors going on in this meal.

Cranberries: NSA and no orange juice added, one 12oz bag berries with a few squirts of liquid stevia, orange zest, water, 1 cinnamon stick, heated in a pan until berries burst and thicken. Cool. Refrigerate. One TB doesn't kill my blood sugar.

Italian sausage fried in butter, one tablespoon mustard (I checked, the mustard is .1 carb gram per teaspoon), green olives counted at .2 grams each.
