Cold ham with mayo, wrapped in a corn tortilla. Snap peas. Top-of-stove-made popcorn is tonight's snack (every Friday). We're back to Jolly Time.

Cream of Jalepeno Soup (bisque soup - lots of calories, about 14 carbs per serving). Recipe here.
Open grilled cheese with fried ham slices (only 1 bread).
snap peas
Blueberries for tonight's snack.

Note: if you go with the soup, it is not HOT. Feel free to add a couple more jalepenos.

Dinner tonight was chicken thigh, stuffing, and corn. I skipped the stuffing and had a half serving of dessert instead (Rhubarb Crunch). This dessert is not low carb. You can reduce the carbs a bit by using more oats than flour and up to 6 cups of fresh rhubarb for the same amount of sugar. The changes don't work well with frozen rhubarb. I also use butter instead of margarine.

Bunjee - what was your blood sugar level after eating what seems to me a meal quite high in carbs.

205 and don't make too much fun of me. Prior to dinner, my BG was 85, so I didn't take any insulin and I should have. Even though I finished the prednisone on Friday, I am still way overreacting toward the end of the day. Poo. I'll be contacting the diabetic educator tomorrow. But, yes, no more Rhubarb Crunch for me this week. It's hard to figure this out - I'm not accustomed to my BG ever being over 150.
