Local grassfed sirloin (with butter on top)...the best I've had...baked potato, salad, and fresh organic cherries for dessert. Whole Foods here had the cherries on sale for $2.99/lb yesterday only. We got two big bags of them. Yum!

Having Pork back ribs tonight - BBQ time. Been working on them a few hours already, plan on eating them in about another hour.

That, salad and some sweet potato fries.

As of Apr 23, 2013: 14-day Avg Fasting BG: 4.7 (85), A1c (Dec21): 5.1%, Stats: 230lb, 6'3" now with 37" waist

Low-Carb (Usually < 45-60g per day on a 3,000+ calories daily diet)

On Metformin only for meds. Exercise 6 days a week.
Supplement only with: Men's Multi-Vitamin, Vitamin D 2000iu/day, Aspirin 81mg, Cinnamon Extract and Fish Oil all 1x per day

Yum! We've got ribs in the freezer for next weekend... takes a while to cook them so they're not weeknight material!

We're having grilled salmon and broccoli tonight.

We had fried okra and squash casserole. Both were wonderful. We also ate grilled chicken breast which I slightly over cooked but OK.


SUMMER SQUASH CASSEROLE
5-6 summer squash
3/4 stick butter
1 c. sour cream
1 c. chopped onion
1/3 c. grated Parmesan cheese
1 1/2 tbsp. white wine
1 jigger of water

Microwave sliced summer squash 6 min with one jigger of water.. add butter, cheddar cheese, sour cream, onion, Parmesan cheese and wine. Mix completely. Pour into casserole baking dish. Bake at 350 degrees for 30 minutes.

Bugg & Jan drank the rest of the wine..hick

Default We started out with squash too . . .

but it quickly overflowed the skillet!

This recipe got me going, but what actually happened was this:

1# ground chuck
1 small onion, diced
1/3 of a large yellow bell pepper, diced
1 medium-size zucchini, sliced/diced/whatever
1 cup snow peas (I halved these just to make it all more uniform in size.)
1 cup diced tomatoes (that recipe sez 1 c. (1 lb.), which is nonsense - a PINT's a pound! )
1 c. sliced fresh mushrooms
big healthy scoop of sour cream
big handful of grated cheddar
salt to taste
tabasco to taste

I started the beef browning & just added everything else as I got it cut up . . . then plopped in the cream/cheese/seasonings & let it heat for a few minutes. I shoulda remembered your white wine, Bugg!

Served it right outta the skillet . . . I was not just ABOUT to start the oven with it 98 (36.67) out!
And we hadda go out in it TWICE . . . took Fritz for grooming today & hadda go back & get 'im. But man does he look purty & boy does he smell good! First time & prob'ly the last, but he's steppin' out in style this weekend on our trip to Lincoln for little sister & hub's 25th anniversary party.

I am so glad it is not that hot up here, i think we are pushing it to hit 65 today. i really hate it when it gets hot like this up here.

My thermometer his 105 today, heat index was 122.
