Chicken Chesapeake! For those that do not have the pleasure of this great dish

6 Chicken Breast- I but the whole breast remove the skin and the tenders... Shin is cooked as a treat for my dogs... Tenders are lunch
Cut a Pocket to stuff them

Combine
12 ounces backfin crab meat
1/4 cup mayonnaise
2 dashes Tabasco sauce
1/4 cup onion, chopped
1 teaspoon old bay seasoning
1 teaspoon Worcestershire sauce
Mix gently then stuff the breast then wrap the breast with
6 thin slices of smoked ham

then cover with
6 ounces wheat bread crumbs
3 ounces Parmesan cheese, grated

Remaining mix can be placed on top or made into crab cakes\

Bake at 350

I make 6 because the wife and I will take them for lunch and it works out good witht he amount of crab... Now I am hungry again... Might need to eat some left overs

Sheesh... I had those tacos tonight, 16g carbs and when I tested my glucometer showed 287!!! I almost had a heart attack!





Yeah, well... just a reminder to wash your hands well before testing! I had been baking for my husband and must have had some sugar or juice on my hands.

Retested for a nice 110.... whew!

Tomorrow I'm getting fennel in my CSA box and thought I'd make (brave) a fennel/pear salad with pine nuts. I used to eat pine nuts all the time but haven't gotten them for a while. So I went to Safeway (this is a mass-market chain grocery store in the Western US) and pine nuts, from the bins, were ... $40/lb!!

I put what I thought were very few in a bag, at checkout they were $18 and I couldn't, just couldn't.

My salad will have to be with walnuts - as usual.

BTW - does anyone have a favorite dynamite fennel recipe?
