How to season baked fish?

I'm not real fond of baked fish, especially mine. I tried salt and lemon pepper, had to hack it down. Is there some way to actually make it taste good?

While I'm at it, what can you do with a can of spinach besides pouring something over it, is there a dish you can make with it?

I'm not a fish person either. But my husband loves fish. I usually marinate it in olive oil and spices and then grill it. As far as spinach I usually use the frozen kind. You can pep it up by adding some cream chese and spices to it. Almost a creamed spinach. Spinach is my husband's favorite veggie.

There are a lot of seasoning rubs out there you can use to make the fish tasty. Look for them in the spice aisle of the grocery store. Don't just stick to the ones labeled for fish -- one of my favorites is the sweet mesquite seasoning from Costco. It recommended for steaks, burgers, ribs, chicken and turkey. I use when I make fish tacos. It gives the fish a great smokey taste.

Being in Louisiana we catch a lot of fish and eat a lot of fish. Fishing is one of my sport activities mostly salt water fishing. Redfish, speckled trout, sheephead, flounder, catfish, perch, bass. Before being diagnosed I consumed a lot of fried fish, I do a lot of grilling, or baking too, I loved grilled redfish and I use a LA based seasoning Cajun King Butter Pecan or Lemon Butter Amandine. Tony Chachere's Creole Seasoning, Zatarain's Cajun Seasoning and a new one called "Slap Ya Mama", these are the ones I use for my fish. A friend of my husband is from Jamaica he told me to try rolling my fish in Thousand Island dressing and fry slowly in a little grape seed oil (just enough to coat the bottom of a cast iron skillet. Very, very good.

Spinach is usually eaten fresh...love the baby spinach in salads or just a spinach salad by itself. I'm not crazy about cooked spinach, but I do loved mustard greens, collards & turnip greens.

We still bread & fry our fish over here - using the low-carb breading. I'm not a big fan of baked fish either, but fortunately, my meter likes it okay breaded & fried too . . . ;)

I never EVER buy canned spinach . . . we grow our own to eat fresh, and in winter I buy it frozen in 1 lb. bags, which one bag makes a meal. Here are several recipes from our Recipe Board, but I wouldn't try using canned here.

Thanks for the baked fish tips, but I'm with Shanny on this one. No need hacking fish down when there is a way to actually enjoy it.

You can't believe everything you read online, but at Popeye's spinach website, they claim you can substitute one can of spinach for 10 oz. frozen in recipes.

I remember growing up in a Catholic family, it was fish every Friday. The problem was we couldn't get fresh fish back in the 50's so it was frozen fish. I remember my mother baking it in milk. I can still remember my gagging response. I agree try spicing it up. I like the Costco Mequite seasoning, too. I marinate my chicken fillets in egg and spices before I bread it with almond flour. You could do the same with fish and then saute it in olive oil.

I do the same low-carb breading as shanny (Brandi's breading), then enjoy it with some tartar sauce. I use a store-bought tartar sauce that's low in sugars, but it's pretty easy to make yourself if you google it.

I have Tilapia at least three times a week. I smear it with butter first, then season it with - in order - lemon juice, flax meal, Italian seasoning, Old Bay seasoning, lemon pepper, and covered completely in paprika. 30 minutes in the toaster oven, it comes out perfect every single time.
