Default Dessert......

Good morning everyone!

Here is my dilemma...........

My in-laws are coming to dinner this weekend and I have decided on a meal of roast chicken, green beens, mashed cauliflower with a bit of cheese melted on top and a green salad. The problem is dessert! Anyone have any brilliant dessert ideas tucked away that they would share?

I would really like to find something that I can enjoy as well as everyone else...........*sigh*

Whipped heavy cream with a few wild berries stirred in (frozen berries are fine -- makes it a bit like ice-cream) and dark chocolate shaved over top just before serving.

Cheese plate with a selection of full fat cheeses and nuts... and dark chocolate

Do a Google search for flourless black bean cake. It's outta this world and you can eat it too if you modify with art. sweetener. Or one I had in Yugoslavia...yogurt (Greek), layered in a tall wine glass with crushed walnuts or other nut, with honey for them on the top and sweetener for you. Put several layers. Then top with whipping cream...simple, fast and delicious!

Default Chocolate topping for Vanilla Carbsmart ice cream..

Bugg's ice cream topping… just because you need a fix….
or you just feel like something rich and sweet….Hea!

two parts …. sugar free Hershey’s chocolate topping
two parts …. sugar sub, crystal ( what ever you use is OK )
three parts ….Cream or half n half (+ or – according to the thickness you like)
one part …. Peanut butter, any kind, crunchy or reg.

Combine all ingredients and mix until soft and thick. Pour about 1 tbs. or amount desired over Brayer’s Carbsmart vanilla ice cream…

S.O.B. it’s wonderful… Man Please..!!! … and carb friendly…

Thank you to everyone. What is peanut butter pie? All of your ideas sound wonderful and now the hard part will be to choose which dessert will be served.

I have a few that I like. One is Jello Sugar-Free Instant chocolate pudding. It has a few carbs but I cut the 1/2 cup servings down to 1/4 cup to bring it down to about 3-4 carbs. I take the mix and add in 1 cup of cream diluted with one cup water, add a little flavored extract (I use peppermint) and beat it till it's a really thick mousse, pour in 1/4 cup bowls, then sprinkle flax meal on top, cover with plastic wrap and chill in the fridge for about an hour. I also do the same with the banana cream flavor mix and throw in a few tsps of unsweetened cocoa with a bit of Truvia and the same cream mixture - it comes out fantastic! Using 1/4 bowls, I usually get between 6-8 servings from one package.

You can also use my grandmother's South Philly cheesecake recipe - 2 bars Philly cream cheese, 2 eggs, Truvia (to taste) and a little anise, bake in 1/4 glass bowls at 350 for about 5-10 minutes, just enough to get the egg cooked. Don't let the top brown, or it will come out firm - it is meant to be kind of gooey. Hope you try them and enjoy!

I made this for my daughter's birthday and its awesome!

Coffee Mousse or Coffee Ice Cream...or Chocolate or Berries etc
Ingredients
4 shots of espresso (or 4 teaspoons of granulated coffee in 125 mls hot water)
50g unsalted butter
4 eggs separated (best to use very fresh ones)
250ml cream
2 tablespoons sugar substitute

Method
Melt the butter in the microwave
Add coffee and sugar to the coffee
Separate the eggs
Whip egg whites until stiff
In another bowl whip cream until soft peaks
Add egg yolks to coffee mix
Gently fold cream into egg whites
Fold the coffee mixture to cream and whites

For Mousse portion into 8 dishes and refrigerate for at least 3 hours

For Ice Cream place mixture into sealed container and freeze for 6 hours

Variations Substitute 200gms of chocolate with the coffee or a teaspoon of vanilla extract or chopped/squished fruit etc
