Actually there are no tomatoes in the recipe. I only add a little as a garnish along with salsa. I found the recipe on cooks.com I think and kind of tweeked it a little to my liking. It uses the large green chilis that are mild, shredded Monterey and Cheddar cheese and an egg batter. This time I added ground beef and some chopped onion and made a complete meal. I make a large batch and four of us can get three meals out of it and everyone is full.

I'd gotten the recipe from a friend back in the late 1980s . . . such a simple quick/easy recipe for such a terrific dish!

Had two cups of decaf w/HWC to defrost from the 6F degree weather. Ate two cream cheese muffins w/lemon flavored cream fraiche topping and a cheddar cheese snack stick. Eight g. carb and 49g. of fat.

Actually, chili sauce just happened to be the first thing I ran into in the fridge . . . you can whomp up any kind of dip you like - doesn't even have to be mayonnaise base - use sour cream or a mixture of mayo/sour cream - cream cheese - whatever! I often use mayo with a squirt of prepared mustard. Mustard always trips my trigger - it's the single food that causes me to start salivating - my nose catches a whiff of mustard, and my mouth throws the switch! Nothing else does this - not roasting meats or bakery products - only mustard! lol!

This breakfast kept me going all day until about 8 pm, when I had some mixed nuts and a small bowl of yogurt/creme fraiche. Hope it does the same today.

I made two fresh farm eggs scrambled with a little bit of onion and mushrooms in coconut oil. I put it on two slices of low carb whole wheat and grain toasted bread. No salt or pepper. Tasted great!

2 cups decaf with coconut oil and HWC, greek yogurt with blueberries.

Of Nexium...GERD is back already. Boo. Trying Prevacid.
