What's for Lunch?

I'm sllloooowwwllly coming around to this LC/HF eating and was wondering what you all eat for lunch? I've had a lifelong pattern of a sandwich and fruit for lunch, but that's too many carbs.

Any ideas?

I know it's hard to change habits of a lifetime, I've been having home made vegie soup, or a salad intil I get some recipes to adapt, but I do miss my wholegrain bread but I now can have cheese, cream, for me gonna be trial & error for a while!

Sometimes you have to think out of the box. Most of us grew up on sandwiches for lunch so it is hard to break out of that habit. Salads are a great option, just add the protein you would have normally put on your sandwich in your salad. I also use lettuce leaves or low carb wraps for my sandwich. Lately I've been making my own faux english muffins with flaxseed and using them to make sandwiches.

I will eat breakfast any time of the day.



lunch..
greek yogert. cottage cheese with a sauce, maybe chopped up veggies added. egg salad. tuna salad. chicken salad. salmon cakes.
hamburger no bun.if I have leftover something from the night before. Greek salad love love greek salad. sliced tomato/sliced fresh mozz/fresh basil, wine V & evoo. cobb salad. chef salad.

Same as for breakfast, I just eat whatever looks good - if it's in this house, it's low-carb, so no problem there. Being retired means I can eat whatever & whenever I like - in the days when I slept 'til noon, lunch was breakfast! :D

Today I may have more ribs & sauerkraut - I think that stuff is hammering away at my FBG, of all things! We've had it twice in the span of a week, and those mornings after both showed lower FBG!

... for those that may be NEW to the forum, MCS means their low-carb cookies - check the recipes section...

My typical lunch is a lettuce wrap. I put exactly what I'd put into a sandwich, but wrapped in lettuce.

Yesterday's lunch, for example, was a turkey BLT wrap: Turkey, Bacon, Lettuce, Tomato, Cheese, Pepper, Sage and Mayo wrapped in a lettuce leaf. I also had 1/2 a granny smith apple and a diet coke.

I had 2 leftover Zuch pancakes or frititas or what ever you want to call them. Put a little pizza sauce on them. Topped them with green pepper, onions, mushrooms, pepperoni and moz cheese. Popped them in the toaster oven and ate my piza. Only one "z" because it isnt exactly pizza. Also had a small salad-lettuce only- with a little ranch. It was was tailgate party. lol
This has nothing to do with this thread but I am still in awe that a couple of Splenda is 24 carbs. Is this really correct? I saw it posted somewhere here.

The granulated version of sucralose (Splenda) is bulked up with maltodextrin (in fact, maltodextrin is the primary ingredient), which is where the carbs come from. This is to make it measure spoon-for-spoon like sugar. It can deliver a nasty spike too. I use liquid sucralose instead, which has nothing added to increase volume & doesn't spike me.

I don't know how to put this post where we were talking about Splenda. Sorry, but where do you get liquid Splenda and is it expensive? Trying to say this to Shanny or anyone.

WONDERFUL ideas!! Thanks!! Love the idea of using lettuce as a substitute for the sandwich bread.

I wish I liked greek yogurt, but it's too tart for my taste buds. I love non-greek yogurt and eat it daily - sometimes twice a day. Don't know if I can give this up.

Shanny's pumpkin pie sounds wonderful, but I dare not make it. I cannot be trusted around anything that tastes sweet. Once I get that taste in my mouth, it triggers my "wild" side and I won't stop until the whole thing is gone. :) So, I have to keep my home free and clear of anything dessert-like.

ok lunch is...tuna in olive oil...3 baby tomatos...cucumber...mixed salad leaves including spinash and cos lettuce...some cheddar cheese and a home made chili and seafood sauce...yummmm

Yesterday Lunch:

Fish soup with veggies, tomato, lettuce, roasted Garlic and shallots and tofu :)

Protein - Tofu / bean curd
Good HDL - Fish.
Fibre - Veggies.
Antioxidant = Onions, Garlic and spring onion, ginger

Question: I love salad, but don't usually eat them b/c I've been "shamed" out of eating any kind of dressing that tastes good. And, to me, it's pointless to eat a salad if the dressing tastes like cr*p. :)

I'm not a fan of the Italian dressings. What do you all eat for a salad dressing on the LC/HF diet?

um I use whole egg mayonnaise and change the flavour by adding vinegar...

or a bit of chilli and organic tomato sauce...for a seafood sauce

or even some mustard...

I also mix mayo with sour cream...yumm

Yummy - I look forward to experimenting with these dressing ingredients.
Shanny - I also love a creamy dressing. I used to eat this Honey Mustard dressing from O-Charley's that was at the grocery store produce section. Awesome stuff!

hmmm we can get sugar-free maple syrup here I wonder if you could mix that with mustard and mayo

Sometimes, I add no carb mayo to my regular 2 carb ranch dressing to get to use double the amount with same carb count. Add sugar free ketchup to mayo and have 1000 dressing...you can even add a little sf relish to it. Some people will water the bought dressing down to stretch it. Sour cream with a little garlic, dehydrated onions and some bacon bits is good for a change. I have even finely grated cucumbers in sour
cream or mayo and added a little salt. Experiment.

Lunch for me is the meal with most carbohydrates during the day, but it seems for my body that this works fine.
My better half makes lunch for us. He is just the best!:)
He makes vaffels from cottage cheese, eggs, oatmeal, bran, baking powder, liquid natreen, vanilla essence and cardamom.
Each vaffel is 6,5 carbohydrates and 9,9 protein.
I eat 2 vaffels and I always eat berry with them. I have strawberry from the garden and also raspberry and blueberry. I freeze them in small portions, so I eat 50 gram of berry with my vaffel, and sometimes I also have some whipped cream. This meal makes me feel good for hours.
If he is not home or dont feel like making vaffels, I usual makes pancakes of eggs, sour creme, psyllium, splenda,bran and salt. They are best eaten after a couple of hours, so I love those when we are on trips.
If I visit someone, I eat what they offer, but stays away from things that will makes my BG rise.

Garden salad with avo, ranch dressing @ tuna chilli followed by Greek yoghurt & a few berries... Yummy

I just had a high fat roasted chicken+tuna salad with mayonise and southwest dressings.... so much so for watching my calories !
