Sounds yummy, to eat it served hot! Mother served it hot also, or luke warm by the time we ate it anyway, but I thought it was just because she couldn't wait to dig in!

I just had cauliflower rice with yellow curry, chicken thighs and veggies. I don't even like curry, but it was a great way to sneak in a bunch of extra fat with either coconut milk solids or sour cream.

Next time I'm going to make it without the curry and use paprika instead.

Have never added liquid to my cauli-anything - but will try this cauli rice pilaf. Looks great.

In comments the author says she got riced cauli from Trader Joe's. New item for my TJ shopping list! The consistency of the grate is something I've never achieved. Now I have a rationale to buy already-prepped cauli. It's not laziness - nope ... not that ...
