I've never carb counted in my life, at least not in the conventional sense. I probably should as it would be easier to quantify based on the discussions in this thread. My friends and family often remark that I never eat much and can't figure out why I'm not starving. I'm 5'11'' - around 186 pounds (although I haven't weighed myself lately) with a 32 '' waste.

This is what I ate yesterday:
Breakfast - 1 coffee (with 2 milk)
Mid Morning Snack - Handful of Pistachios and 1 coffee (with 2 milk)
Lunch - Spinach salad (with spinach, mustard, goat cheese, mushrooms, tomato) and 1 coffee (with 2 milk)
Mid afternoon - Handful of Pistachios
Supper - one pork chop, cup of cauliflower with 1/4 cup melted cheddar
Pre-bedtime - Glass of red wine

So what's your guess-timate? Is this low carb?

You would think someone living with diabetes as long as I have would have the whole calorie carb thing figured out but instead I stay away from the foods that spike my BGS or require a significant greater amount of insulin.
