John - I live in France half-time myself, and I find that the French really don't understand skipping dessert. More even than Americans, they need something sweet at the end of the meal. When I just have cheese, people are slightly horrified. The low carb message hasn't in the least arrived where we live in France (Uzs, in the Gard) and it's amazing how often I have to explain why I don't even eat fruit.

Tell me about it!

When I was diagnosed, I had visitors so the doctor allowed me home for the weekend. Judy fed me low carb and when I went back to the hospital on the Monday with my food list, the doctor tore me off a strip for the lack of starches. She even wrote to my doctor warning him of the "unbalanced diet" that I was eating!

That's why I don't see a doctor in France for diabetes treatment - they're way behind the low carb curve!
