I see the question "Why LCHF?" asked a lot, here and elsewhere. These videos may help you understand.

Author/Journalist Gary Taubes and Dr. Thomas Dayspring, MD FACP, FNLA, NCMP are featured on a series of new videos discussing nutrition. The target audience are policemen and firemen sponsored by an organization called Specialty Health [not sure who they are]. It seems like an extensive discussion over several videos. They're very conversational and not particularly focused, but they're very enlightening.

In this video, Gary and Dr. DaySpring discuss the fundamental science of fat accumulation. This is the foundation idea of LCHF. If you watch one, make it this one.
