My favorite grocery store cooks ribs on a grill every holiday weekend between Memorial Day and Labor Day. I bought two slabs without sauce today--It's what's for dinner for a few nights!

Dark meat chicken that was cooked in olive oil and almonds - topped with a cauliflower white sauce (a variation of this recipe minus any broth https://www.pinterest.com/pin/310678074291075720/ )

I added fresh spinach to the pan and sauteed it with the chicken before adding the sauce.

Corned beef hash.

Added chopped up deli corned beef to cooked cauliflower rice. Sauteed in beef tallow until hot. Stirred in mayonnaise and mustard. The mustard makes it a bit tangy. Was really good.

I don't know what to call the meal I'm eating. I'm working 12 hour graveyards and eating when I get up in the afternoon, usually around 3'ish. I kind of feel it is more like breakfast in the afternoon. Yesterday I had a hamburger patty with bacon and cheese and mayo, and some sautéed mushrooms and broccoli. I had scrambled eggs with peppers, onions, sausage, and cheese and a couple of slices of bacon the day before.

I plan to have a taco salad. Recipe from Linda's Low Carb Menus & Recipes .. Had same last night was very good.

Tonight: Pork Chops Smothered with Onions and Bacon

Chop up a few slices of bacon and cook in a large pan. Add a finely-chopped medium onion and cook it past soft (about 10 minutes). Remove the bacon and onion but leave the fat in the pan. Take four thicker pork chops, salt and pepper them to taste, and put them into the pan for a few minutes to sear. Then flip them over and then lower the heat to cook them through. When the chops are done, take them out of the pan and put in about half a cup of chicken stock to deglaze the pan. When you've scraped up the bits from the pan, stir in either a quarter-cup of heavy whipping cream or an ounce of softened cream cheese and let that cook until it thickens. Put the bacon/onion mixture back in the pan to mix and combine and pour over the chops.

Dinner is ready. Even got raves from my non-low-carbing wife...

Promised to do better today, but had 2 tacos, each in a small low carb tortilla. I wonder would a taco shell be lower carb? May have to look that up.
